Classic Chickpea Salad Sandwich

I love salad-type sandwiches. I used to eat chicken and tuna salad sandwiches all the time. So I was super excited to discover their vegan counterpoint, the chickpea salad sandwich. I especially love this sandwich, because it is hearty, but light, and it doesn’t have “fake meat” in it. And chickpeas are packed with nutrients and protein! (And we all know how people are obsessed with protein.)

So the totally awesome thing about chickpea salad sandwiches, is you can customize them any way you want! For this one, I used a general chickpea base with garlic, bell peppers, onion, and baby spinach. But I’ve also made ones with curry powder or pickle relish. Really it’s all about whatever you’re in the mood for. And what you have on hand… usually it comes down to that at our house. =P And you can totally hide lots of leafy greens in this mixture. Here I used spinach, because that’s what I had, but I’ve also used kale, parsley, or even cilantro!

So let me let you in on a little secret… use a food processor. Other recipes say it’s the same if you squish the chickpeas by hand, but guess what… it’s not. It’s waaaay better in the food processor. It’s a texture thing. And make a lot, because you can use it for other delicious sandwiches, like this Falafel(ish) Sandwich. Two sandwiches, one mix. Success.

Once you mix it up, you’re done. I put it on some yummy grain bread and added fresh-from-the-garden tomatoes (drool) and fancy artisan lettuce. Because quality matters!! So let’s recap:

Classic Chickpea Salad Sandwich

Beans beans, they're good for your heart. The more you eat, the more you... want to eat more of them because this sandwich is the bomb. =P


  • 2 slices good bread
  • 1 cup cooked chickpeas
  • 1 handful baby spinach
  • 1 clove garlic
  • 2 Tbsp chopped onion
  • 1/3 cup chopped bell peppers (I used red and orange)
  • 1 tsp lemon juice
  • 2-3 Tbsp vegan mayonnaise
  • salt and pepper, to taste
  • sliced tomato
  • fancy lettuce


  1. Put chickpeas, spinach, and garlic in food processor and process until chopped fine.

  2. Add onion, bell peppers, lemon juice, mayonnaise, salt, and pepper. Mix well.

  3. Put chickpea mixture on bread and add toppings as you wish!

  4. Enjoy!
