Vegan BLT with Eggplant Bacon and Sriracha Mayo

The BLT. The legend. Everyone knows (and loves) a good BLT. And it is definitely on our list of Savage Sandwiches. You would never believe that this sandwich originated from tea sandwiches. Say what?! It’s so… not a tea sandwich.

A BLT has to have 4 main parts:

  • Bacon
  • Lettuce
  • Tomato
  • Bread

And this sandwich hits all of those… as well as having a spicy sriracha mayonnaise to give it a kick!

I made this sandwich during my Vegan BLT Feast. It ticked all the right boxes on my BLT list, and satisfied my BLT craving that I have had for at least a year! I made this eggplant bacon, and it turned out pretty darn good.

That was really the only part that required any effort. (Hooray for laziness!) The tomatoes did all the rest of the work.

Nothing beats a summer tomato. Nothing. You can quote me on that.

These are tomatoes from my garden. If you don’t have a garden… get one pronto! But seriously, fresh tomatoes are better than any tomato in a grocery store. So if you don’t have any, ask your friends, or visit your local farmer’s market. They also will have varieties you just don’t find in the store. Like the Cherokee Purple in this picture (at the bottom). Which is what I used in this sandwich. It might be my new favorite tomato.

Then, because I can’t use regular mayonnaise anymore, I made sriracha mayo. Super easy… just mix your favorite vegan mayonnaise and sriracha sauce. And voila! Amazing summer sandwich.

Vegan BLT using eggplant bacon, summer tomatoes, artisan lettuce, and sriracha mayonnaise. All vegan. Plant based. Delicious.


  • 2 slices good bread
  • 4 slices eggplant bacon
  • sliced tomato
  • leaf lettuce

Sriracha Mayo

  • 2 tbsp vegan mayonnaise
  • sriracha, to taste


Sriracha Mayo

  1. Mix mayonnaise and sriracha until it is hot enough.


  1. Toast bread.

  2. Construct sandwich with sriracha mayo, eggplant bacon, tomato, and lettuce.

  3. Eat!
